Alastair McLeod's Mother's Day recipe

Attention Dads! Are you looking for a way to treat the mother of your children this Sunday? Celebrity chef Alastair McLeod has put together an easy-to-follow recipe for all of our Mater dads which is sure to impress on Mother's Day. 

Smoked salmon and leek frittata

  • 200g leeks, washed and finely sliced
  • 25g butter
  • 200g smoked salmon, finely sliced
  • 3 eggs
  • 3 egg yolks
  • 350ml cream
  • 2tbs tomato ketchup
  • 1tbs basil 

Method

  1. Fry leeks in butter without colour for 4-5 minutes until tender.
  2. Remove from pan and allow leeks to cool then squeeze out excess moisture. Fold through smoked salmon.
  3. Meanwhile, whisk eggs, egg yolks, cream and ketchup.
  4. Pour over leek and salmon mixture, add basil and mix to combine.
  5. Season to taste then bake in a 28cm non-stick pan for 40 minutes at 150C. The frittata should be just set and lightly golden.
  6. Serve either warm or at room temperature with a simple salad.

Serves 6
